1. Preheat oven to 400 degrees. Once preheated, pre-bake the frozen pie crusts according to package directions then carefully remove from oven to a baking sheet. Reduce heat to 375 degrees.
2. While pie shells are cooking, heat butter in a large skillet over medium heat, then add shallots and sauté for 3 minutes or until softened, then add spinach and cook until wilted. Remove from heat. Add salt and pepper to taste.
3. Whisk together eggs and half & half in a large bowl.
4. Divide the spinach mixture evenly between both cooked pie shells, then gently pour egg mixture over the top of each.
5. Place quiches (still on baking sheets) into the oven and cook for 40-55 minutes, or until quiches are set and golden. Create a small cover using aluminum foil to shield edges of pie crust if it seems like it is browning too quickly.
6. Remove from oven and let cool at least 10 minutes before serving.
