Ingredients
1 cup Minute® Instant Basmati Rice
1 tbsp olive oil
1 tbsp shallot, diced
1/4 cup dried cranberries
1/4 cup shelled pistachios, chopped
1/4 tsp salt
1/2 medium lemon
2 tbsp goat cheese crumbles
Directions

Step 1: Heat rice according to package directions.

Step 2: Meanwhile, heat olive oil in pan on medium heat, add shallots and sauté for 1 minute, add cranberries and heat for an additional minute.

Step 3: Add pistachios, rice, salt and fresh dill. Mix well until heated through.

Step 4: Squeeze fresh lemon over rice and serve garnished with goat cheese, lemon slices, and dill on top.
