1. Add rice, cinnamon sticks and almonds into a large bowl or pitcher and cover with water. Let soak for at least 8 hours or overnight.
2. Strain the rice mixture and place into a blender with the evaporated milk and blend until mixture is smooth and the rice seems well ground.
3. Strain mixture into a pitcher and add sugar, vanilla and milk of choice. Mix well
4. Blend the cinnamon, rice, and almond mixture with evaporated milk until it reaches the consistency of a smoothie.
5. Strain the resulting liquid into a pitcher. Add the sugar, vanilla, milk and water and stir until well combined.
6. Serve over ice with additional cinnamon sticks to garnish, if desired.
