Customizable Crinkle Cookies

Ingredients
1 box cake mix (we used Red Velvet)
⅓ cup Bowl & Basket vegetable oil
2 Bowl & Basket large eggs
1 tsp Bowl & Basket vanilla extract
1 cup Bowl & Basket powdered sugar, sifted
Directions
- Combine cake mix, oil, eggs and vanilla extract in a large bowl and either stir vigorously by hand or beat with a mixer until dough is smooth. Cover bowl with plastic wrap and refrigerate for at least 1 hr.
- When ready to bake, preheat the oven to 350 and line two baking sheets with parchment paper. Add powdered sugar to a small bowl. Scoop rounded tablespoons of the dough and roll in powdered sugar before placing on the prepared baking sheet, leaving 1 ½ inches of space between each for spreading.
- Bake at 350 for 9-11 minutes, or until edges are set and beginning to brown. Remove from the oven and let cool on the pan for 5 minutes (this helps the cookies set up) before removing to a wire rack to cool completely.
Variations:
- Peppermint: use vanilla cake mix; replace ½ tsp vanilla extract with peppermint extract and stir in ½ cup mint chocolate baking chips
- Lemon: use lemon cake mix; replace ½ tsp vanilla extract with lemon extract and add in zest of one lemon.
- Mocha: use chocolate cake mix; whisk 1 tsp instant coffee granules into the oil before mixing into the rest of the ingredients
