Ingredients
1 can (10 ounces) mild enchilada sauce
2 cups shredded skinless rotisserie chicken breast meat
2 cups microwaveable cilantro-lime rice
1/2 cup prepare guacamole
1/2 cup shredded Mexican blend cheese
1 tablespoon fresh cilantro leaves
Directions
1. In large skillet, cook and stir enchilada sauce and chicken over medium-high heat 4 minutes or until heated through. Makes about 2 cups.
2. In medium microwave-safe bowl, heat rice in microwave oven on high 1 minute or until heated through.
3. Divide rice into 4 bowls; top with chicken mixture, guacamole, cheese and cilantro
