Chinese Peanut Cookies

Ingredients
1 1/4 cups chunky peanut butter
3/4 cup all - purpose flour
1/3 cup granulated sugar
1 teaspoon baking powder
24 dry roasted unsalted peanuts
1 large egg
Directions
- Adjust 2 oven racks to upper and lower positions; preheat oven to 375°. Line 2 rimmed baking pans with parchment paper. In large bowl, stir peanut butter, flour, sugar, baking powder and 1/2 teaspoon salt. Using 2 small spoons, drop dough into 1 tablespoon mounds, 1 inch apart, on prepared pans; roll into balls and press 1 peanut into top of each ball.
- In small bowl, whisk egg; brush over dough balls and bake 15 minutes or until golden brown and set, turning pans and rotating pans between upper and lower racks h alfway through baking. Cool cookies on pans 10 minutes; transfer cookies to wire rack to cool completely. Makes 24 cookies
