Ingredients
1 can (11.25 ounces) sweetened condensed coconut milk
2 cups unsweetened coconut milk beverage
1 1/2 cups unsweetened soy milk beverage
1 cup coconut rum
2/3 cup real cream of coconut
1 teaspoon ground cinnamon plus additional for garnish (optional)
1 teaspoon vanilla extract
1/2 teaspoon ground allspice
Cinnamon sticks and/or star anise for garnish (optional)
Directions
- In blender, purée sweetened condensed coconut milk, coconut milk beverage, soy milk, rum, cream of coconut, ground cinnamon, vanilla extract and allspice on high until smooth; transfer to large pitcher, cover and refrigerate at least 4 hours or up to overnight. Makes about 6 cups.
- Serve coquito garnished with ground cinnamon, cinnamon sticks and/or star anise, if desired.
Chef Tip(s):
For a coquito mocktail, substitute the 1 cup rum in step 1 with 1/2 cup water and 2 teaspoons rum extract.
