1. Preheat oven to 350°F and line an 8x8 inch square pan with parchment paper. Spray parchment paper with cooking spray, then set aside.
2. Whisk together butter, both sugars, eggs and both extracts until smooth. Gently whisk in flour, cocoa powder and salt until just mixed, then pour brownie batter into prepared pan.
3. Bake for 30 minutes, or until brownies are just set Let cool in pan completely before gently removing from the pan with the parchment paper.
4. Top brownies with vanilla frosting and crushed peppermint candies before cutting into squares and serving.
