Preheat oven to 350 F. Cut one loaf of Pepperidge Farm® Swirl Bread into bite-sized pieces and bake for 10 to 15 minutes on a sheet pan. Bread exterior should be dry and just beginning to take on some color. In a mixing bowl, combine remaining ingredients with a whisk until well mixed. Add the cubes of Swirl bread to the bowl and gently combine with the mixture. Allow mixture to sit for one to two minutes until the wet mixture has been fully absorbed. Grease a standard muffin tin or line with cupcake wrappers. Using a large spoon, transfer the bread mixture (about 1/3 cup) into each cavity. Place in the oven and bake for 20 minutes, rotating halfway through. Remove from oven and let cool for 5-10 minutes, then transfer French-toast bites to a cooling rack.
