1. Cover half of outdoor grill rack with foil; prepare grill for direct grilling over medium-high heat. In medium bowl, gently mix beef, and ⅛ teaspoon salt and ½ teaspoon pepper until just combined (do not overmix); form into 4 (½-inch-thick) patties.
2. In large bowl, spray mushrooms with cooking spray. Place burgers on uncovered hot grill rack; place mushrooms and bacon on foil-covered hot grill rack. Cover and cook 8 minutes or until internal temperature of burgers reaches 160°, bacon is crisp and mushrooms are tender, turning burgers and bacon once, and stirring mushrooms often. About 2 minutes before burgers are done, top burgers with cheese and place buns, cut side down, on hot grill rack.
3. Serve burgers in buns topped with mushrooms and bacon.
Chef Tips: Customize the burger by swapping the bacon with turkey bacon and/or the ground beef with salmon, and topping with your favorite condiments. For salmon burgers, replace ground beef with finely chopped salmon; spray patties with cooking spray and grill 6 minutes or until internal temperature reaches 145°.
