1. Prepare outdoor grill for direct grilling over medium-high heat. Line rimmed baking pan with foil; spray with cooking spray. Spread potatoes on prepared pan; spray with cooking spray and sprinkle with ¼ teaspoon each salt and pepper. Place pan on hot grill rack; cover and cook potatoes 22 minutes or until tender, turning twice. Makes about 4 cups.
2. Spray patties with cooking spray; place on hot grill rack. Cover and cook 10 minutes or until internal temperature reaches 160°, turning once. About 2 minutes before burgers are done, spray cut sides of buns with cooking spray and place on hot grill rack; top burgers with cheese. Cover and cook 2 minutes or until grill marks appear on buns and cheese is slightly melted.
3. Spread tzatziki on bottom buns; top with burgers, optional toppings and top bun, toasted side down. Serve burgers with extra tzatziki for dipping, if desired.
