1. Cut up all tomato, onion, peppers, cilantro, and garlic.
2. Heat 3 tablespoons of vegetable oil in a pot on medium high and let it get hot.
3. Add minced garlic, stir and cook for 2 minutes.
4. Add ground oregano, salt, black pepper and sazón and stir. Cook for 2 minutes.
5. Add the the onion, peppers, tomatoes and cilantro. Stir and let cook for 5 minutes.
6. Add tomato sauce, chipotle peppers with sauce and gandules then stir.
7. Add rice and stir. (Add extra water if needed so that rice is covered by 1 inch of water.)
8. Reduce heat to a soft boil, allowing most of the liquid to evaporate. Stir occasionally to avoid the rice from becoming too soft.
9. Spoon the rice to a mound in the center of the pot and cover with a lid. Cook for 20 minutes. Gently turn rice without scraping the bottom. Cook for another 20 minutes or until it is tender and cooked through. Enjoy!
